I use mango chutney a lot in my cooking. But mango chutney on salmon is my absolute favourite combination. The flavours of the salmon and caramelized spring onion in the chutney are just too awesome not to share. So if you’re looking for a delicious meal idea with very few ingredients, this one is definitely one to try out!

Mango chutney chicken thighs ~ Recipe
I made these chicken thighs last week, marinated in mango chutney and garlic the night before. They were such a hit with my little family, and after I posted the photo on Instagram I was asked to post the recipe on the blog. So here it is – Mango chutney chicken thighs, you can accompany this with a side of basmati rice like we did, and a salsa made with red, yellow and green peppers sauteed in mango chutney.
