Today is my husband’s birthday, so I thought I’d make him a special birthday brunch. I came up with this recipe while looking at the ingredients in my cupboard, and I must say I’m very pleased with how it turned out! If you’re looking for an alternative to your traditional pancake, look no further. These coconut and lemon pancakes, though slightly heavier in texture and probably less ‘fluffy’ (due to the desiccated coconut granules) will definitely hit the spot.

Sweet pepper and coconut curried chicken stew

2019-05-15 12.09.07 1.jpg

This is a recipe I concocted with while experimenting with curries and stews. I wanted a stew that didn’t take too long to cook, but that still had all the flavours of a hearty and comforting curry with a Caribbean (see ‘Colombo de poulet’ – French Antilles) and Asian fusion (see traditional Chicken curry). How to make the best chicken ever?

By letting it marinate for hours before you cook it; overnight if possible.

Mango chutney chicken thighs ~ Recipe

I made these chicken thighs last week, marinated in mango chutney and garlic the night before. They were such a hit with my little family, and after I posted the photo on Instagram I was asked to post the recipe on the blog. So here it is – Mango chutney chicken thighs, you can accompany this with a side of basmati rice like we did, and a salsa made with red, yellow and green peppers sauteed in mango chutney.

Brunch at Christopher’s, Covent Garden ~ An honest review

2016-10-20-05.16.59-1.jpg.jpg

A few days ago, I arranged to meet up with Debra for a quick bite. I had been looking forward to this for a long time. Yes to new friendships, yes to fellow bloggers/vloggers who understand your need to film or photograph every single part of your dining experience. And quite frankly, yes to simply beautiful, kind and funny souls like Debra. I’m always grateful for the people God places on my path.

But back to this restaurant review… Continue reading “Brunch at Christopher’s, Covent Garden ~ An honest review”
