This recipe is one of my absolute favourite fish dishes, great as a summer meal but also a very healthy option as it’s grilled in the oven (as opposed to fried). I made these chicken thighs last week, marinated in mango chutney and garlic the night before. They were such a hit with my little family, and after I posted the photo on Instagram I was asked to post the recipe on the blog. So here it is – Mango chutney chicken thighs, you can accompany this with a side of basmati rice like we did, and a salsa made with red, yellow and green peppers sauteed in mango chutney.
