I made these chicken thighs last week, marinated in mango chutney and garlic the night before. They were such a hit with my little family, and after I posted the photo on Instagram I was asked to post the recipe on the blog. So here it is – Mango chutney chicken thighs, you can accompany this with a side of basmati rice like we did, and a salsa made with red, yellow and green peppers sauteed in mango chutney.
Ingredients to season the chicken:
8 chicken thighs
One tea spoon of sea salt
One tea spoon of thyme
One tea spoon of ground nutmeg
One tea spoon of black pepper
100g mango chutney (homemade or store-bought!)
2 cloves of garlic
Start by making some incisions in the chicken thighs using a sharp knife. Then coat the chicken with all the ingredients, including the chopped up/crushed garlic – in a large bowl. Mix everything well before placing it in the fridge to marinate overnight.
The next day, bake the mango chutney-marinated chicken at 200 degrees for about 35 minutes on each side.
Garnish with fresh parsley if you like the look of it, and enjoy!
