Why I started freezing my chopped veggies (and why I’m never going back)


There was a time when cooking dinner during a busy week felt like a full-time job. By the time I peeled onions, chopped peppers, diced celery and grated carrots, I already felt tired before the actual cooking even started.

So a while ago I started doing something simple that has genuinely made life easier for me: food prepping my vegetables in advance and freezing them.

Every couple of weeks, I set aside a couple of hours, put on a good playlist or podcast, and chop up a whole batch of veggies at once. I usually prep onions, carrots, celery, peppers, garlic and anything else I know I use regularly throughout the week. Then I portion everything into freezer bags and store them in the freezer, ready to grab whenever I need them.


This habit alone has changed the way I cook, and saved me so much time during busy weeks.

On busy evenings, I can just reach into the freezer, grab what I need, and throw it straight into the pan. No peeling. No chopping board. No tears from onions. It makes cooking feel quicker, lighter and much less overwhelming, especially during those weeks where life is moving at 100mph.

One thing I’ve especially been loving lately is freezing my blended seasoning mixes too. I blend together onions, peppers, garlic and herbs, then pour the mixture into silicone moulds (they’re technically cake moulds!) so they freeze into perfect little portions. Once frozen, I pop them out and store them in freezer bags.

They are SO handy for stews, rice dishes, sauces and marinades.

If you’ve been trying to make home cooking easier or reduce food waste, I genuinely recommend giving this method a try. It doesn’t have to be fancy or perfectly organised. Even prepping just a few basics ahead of time can make a huge difference during the week.
